Recipe is set for a serving of 4
- 6oz Texas Redfish
- 3 cups of lime juice
- 1 cup of watermelon
- 1 Serrano Pepper
- 1/2 of an English cucumber
- 1/2 of a Jicama
- 1/2 bunch of cilantro
- Teaspoon of salt
Dice fish and place in bowl with 2 cups of lime juice.
Small dice watermelon and place in strainer, save juice and set aside.
Small dice cucumber and jicama and add to strained watermelon.
Chop cilantro and add to diced mixture.
De seed Serrano and small dice.
Let fish cook in lime juice about an hour or until fish become opaque.
Strain fish and add dish mixture to fish.
Strain watermelon juice and 1 cup of remaining lime juice.
Serve with jicama and cucumber chips.
